Aloo Dum (potato and pea curry)

Ingredients

  • Potatoes
  • Tumeric
  • 2 bay leaves/Indian bay leaves
  • 1 onion finely chopped
  • 6 garlic cloves finely chopped
  • 2-inch piece of fresh ginger grated
  • 1 TSP Chilli Powder
  • 1 TSP ground cumin
  • 1 TSP Ground Coriander
  • 200g passata/chopped tomatoes
  • 150g peas
  • 1 TSP garam marsala
  • Fresh Coriander
  • Optional:
  • fresh chilli to taste
  • other available vegetables

Directions

  1. Boil the potato till just cooked, then fry until lightly coloured. Add 1/2 tsp turmeric in last few minutes of frying

  2. Fry bay leaves, onion, garlic and ginger till soft and slightly browned

  3. Add all the spices and fry for one minute

  4. Add the tomatoes and any other extras and 100ml of water and simmer till reduced -around 10 minutes

  5. Add peas for last 5 minutes
