Zucchini Noodles w/Creamy Roasted Red Pepper Sauce

Ingredients
- 2 roasted red peppers
- 1 Tablespoon olive oil
- 2 oz of goat cheese or cream cheese
- 1 teaspoon sea salt
- FOR ZUCCHINI NOODLES
- 1/4 cup olive oil
- 1/2 cup minced onion
- 2 cloves garlic, minced
- 1 teaspoon sea salt
- 2 pounds zucchini, made into noodles
Directions

Roasted the peppers on top of stove in iron skillet or in the oven.

Add the roasted peppers to the blender with the rest of sauce ingredients, and blend until smooth.

for the zucchini noodles, heat a large 15" deep sided skillet over medium high heat. When the skillet is hot, add the olive oil, onion, and garlic – saute for a minute or two until onionis softened. Add the seas salt and zucchini noodles to the skillet and saute by tossing the noodles with tongs and cook just until noodles begin to sofen.

Add the sauce and cook just until the sauce is heated. Adjust the seasoning.

Serve immediately with parmesan cheese or extra cream cheese.
