PM Red Cabbage

Ingredients

  • 2 Tbs BUTTER
  • 1 RED ONION, peeled and thinly sliced
  • RED CABBAGE, shred finely
  • 4 Tbs RED WINE VINEGAR
  • 5 Tbs DARK BROWN SUGAR
  • CINNAMON STICK
  • 1 ORANGE, juice and zest
  • 1/2 cup of WATER
  • SALT and freshly ground BLACK PEPPER

Directions

  1. In a large pan, melt 2 Tbs BUTTER, and saute 1 RED ONION, peeled and thinly sliced until softened. Remove and discard the core from a RED CABBAGE, shred the rest finely, then add to the pan along with 4 Tbs RED WINE VINEGAR, 5 Tbs DARK BROWN SUGAR, and a CINNAMON STICK. Stir together for a few minutes, then pour in the juice and zest of 1 ORANGE and 1/2 cup of WATER. Season with plenty of SALT and freshly ground BLACK PEPPER. Bring to a boil, then reduce the heat, cover with a lid and simmer 35-40 minutes until the cabbage is tender and the liquid has evaporated. Garnish with orange zest.
