Roasted Off the Cob Corn

Serves 4 people
Ingredients
- 2 tablespoons butter
- 4 corn on the cob
- 1/2 cup onion
- 1/2 cup red pepper
- salt and pepper
Directions

Take the kernels off the cob with a knife. In a skillet, melt the butter and saute the onions, peppers for about 2 minutes or so. Add the corn and saute until corn is done, kind of crispy.
