Tortilla Espanola

Good served with fried chorizo or ham and fresh crusty bread.

Ingredients

  • 2 potatoes
  • 1/2 small onion thinly sliced
  • 4 eggs, beaten
  • 1/4 cup oil

Directions

  1. Peel the potatoes and slice them finely.

  2. Cover the bottom of a large non-stick skillet with extra virgin olive oil, heat and add potatoes and onions and cook, uncovered about 20 minutes, until soft.

  3. Add the eggs right on top so that they cover the potatoes entirely, cover and cook until almost completely set.

  4. Invert the tortilla and cook the other side.
