Ingredients
- 2 cups (500 mL) whole-wheat or white flour (or a combination)
- 2 cups (500 mL) milk
- 3 eggs
- 1/4 cup (50 mL) vegetable oil
- 1 tbsp (15 mL) baking powder
- 1 tbsp (15 mL) sugar
- 1/2 tsp (2 mL) baking soda
- 1/2 tsp (2 mL) salt

In a large plastic bottle with a tight-fitting lid (or in a large mixing bowl) combine all the ingredients. If you’re using a bottle, cover with the lid and shake everything up into a smooth batter. If you’re using a bowl, beat all the ingredients together with a whisk or electric mixer just until smooth.

Pour a thin layer of vegetable oil onto a large skillet or griddle. Place over medium heat until a drop of water sizzles when it hits the pan. Pour the batter onto the skillet or griddle to form pancakes — large or small. Let cook until bubbles appear on the tops of the pancakes, then turn and cook the other side — about 1 or 2 minutes per side. Repeat with the remaining batter, adding more oil to the pan as needed. Pancakes should be golden brown and cooked through.

Serve immediately with maple syrup (or whatever your family likes).
