Apple sauce-Quinoa Muffins

day 3 on the rotation diet. They are sweet and have a spongy texture.

Ingredients

  • 1/4 C. Arrowroot powder
  • 1/4 C. Quinoa flower
  • 1/2 C. Quinoa flakes
  • 1/8 C. Organic sugar
  • 2 tsp G-F baking powder
  • 1 tsp Baking soda
  • 1/2 tsp salt
  • 2 TBS Arrowroot powder
  • 1 TBS Psyllium Husk powder
  • 1 1/2 tsp Cinnamon
  • 1 C. organic apple sauce
  • 2 TBS Honey

Directions

  1. Grease muffin tin and preheat oven at 400 degrees.

  2. Mix all dried ingredients well with a whisk.

  3. Mix apple sauce and honey together in a smaller bowl. You might want to heat up the honey for 10 sec. in the microwave.

  4. Add apple sauce mix to the dry ingredients.

  5. Mix quickly and try not to over mix.

  6. Put 1/8 C. of batter in each muffin hole.

  7. Bake for 10-15 minutes, depending on your oven.

  8. Check to see with the tip of a knife if the muffins are ready.

  9. Muffins are ready when there is no batter on the knife and it comes out clean.

  10. Cut around the edges of the muffins and loosen from the pan with a spatula.

  11. Cool on a rack
