Cultured Cinnamon Apples

Serves 4 people
Ingredients
- 1/8 t. Starter Culture plus 1/4 cup water, or 2 T. Kefir Whey
- 1/2 cup ample syrup
- 2 apples, cored and sliced into rings
- 6 mustard seeds
- 6 allspices berries
- 6 whole cloves
- 1 cinnamon stick
- 1 star anise pod
- 1 t. salt
- 1 bag black tea
Directions

If using the sarter culture, stir together the cutlture and water. Let the mixture sit while you prepare the ingredients-around 10 minutes.

Place everything but the starter culture into a 1-quart jar.

Add the starter culture or kefir whey and fill the jar with filtered water, leaving 2 to3 inches of headspace to let the apples bubble and expand as they ferment.

Seal the container and let it sit on your kitchen counter, out of direct sunlight, for 2 days
