Cultured Cinnamon Apples

Serves 4 people

Ingredients

  • 1/8 t. Starter Culture plus 1/4 cup water, or 2 T. Kefir Whey
  • 1/2 cup ample syrup
  • 2 apples, cored and sliced into rings
  • 6 mustard seeds
  • 6 allspices berries
  • 6 whole cloves
  • 1 cinnamon stick
  • 1 star anise pod
  • 1 t. salt
  • 1 bag black tea

Directions

  1. If using the sarter culture, stir together the cutlture and water. Let the mixture sit while you prepare the ingredients-around 10 minutes.

  2. Place everything but the starter culture into a 1-quart jar.

  3. Add the starter culture or kefir whey and fill the jar with filtered water, leaving 2 to3 inches of headspace to let the apples bubble and expand as they ferment.

  4. Seal the container and let it sit on your kitchen counter, out of direct sunlight, for 2 days
