Beef Franks & Veggie Stir-fry with Quinoa

Serves 4 people
Ingredients
- 2 T. bacon grease
- 1 T. avocado oil
- 6 pastured beef franks, cut into 1/2" pieces
- 2 carrots, sliced
- 2 cups spinach, cut-up
- 1/2 an onion, diced
- 1 cup cabbage, sliced
- 1/2 t. onion powder
- salt and ground pepper to taste
Directions

Heat oil in a skillet; add the franks and brown them slightly. Add the veggies and continue stir-frying until all veggies are light cooked. About 10 minutes.

Prepare quinoa according to package directions. Add butter and salt and serve hot veggie mixture over it.
