Beef Franks & Veggie Stir-fry with Quinoa

Serves 4 people

Ingredients

  • 2 T. bacon grease
  • 1 T. avocado oil
  • 6 pastured beef franks, cut into 1/2" pieces
  • 2 carrots, sliced
  • 2 cups spinach, cut-up
  • 1/2 an onion, diced
  • 1 cup cabbage, sliced
  • 1/2 t. onion powder
  • salt and ground pepper to taste

Directions

  1. Heat oil in a skillet; add the franks and brown them slightly. Add the veggies and continue stir-frying until all veggies are light cooked. About 10 minutes.

  2. Prepare quinoa according to package directions. Add butter and salt and serve hot veggie mixture over it.
