GAPS homemade mayo

(from greenfood’s recipe box)

Ingredients

  • 1 egg
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1/4 teaspoon mustard powder
  • 1 cup olive oil
  • 1 teaspoon honey
  • sea salt and black pepper taste

Directions

  1. Place egg, vinegar and mustard powder in food processor; process until blended.
  2. While machine is running, slowly drizzle oil through feeding tube; this will take a few minutes. Mayonnaise will thicken towards the end. Add honey and season with salt and pepper; pulse a few times to blend in.
