GAPS Chicken bone Broth

Ingredients

  • 2 Chicken carcasses,picked of meat OR 1 whole chicken
  • 4 chicken feet
  • 4 quarts pure water
  • 3 celery ribs, coarsely chooped
  • 2 carrots, coarsely chopped
  • 1 onion, coarsely chopped
  • 2 Tablespoons of vinegar

Directions

  1. If using whole chicken, cut it up and place the pieces, except for the chicken feet, on parchment paper-lined sheet pan. Roast the pieces in a 350 F oven for about 20-30 minutes. Place all the browned pieces in a heavy stock pot and let stand at room temperature for 30 minutes, allowing the vinegar to act on the bones and draw the minerals into the water.

  2. If using carcasses, just place all ingredients in a heavy stock pot and let stand a room temp. for 30 minutes.

  3. Bring the bone broth to a boil. Skim and discard the scum. Lower to a simmer. Cover and simmer for6-24 hrs.
