GAPS Basic Chicken Meat Stock

You can substitute chicken thighs and legs.

Ingredients
- 2-3 lbs. pastured skin on chicken.
- 3-4 carrots, coarsely chopped
- 1 small onion
- Handful of black pepper
- 1-2 teaspoons Celtic Sea Salt
- 2-3 sprigs fresh rosemary or thyme
- Water to cover by 2 inches
- Garlic cloves, to finish

Place all ingredients in 5-6 quart dutch oven. Bring to a boil, skim and discard the scum. Bring down to a simmer

Keep at a low simmer for 1-1/2 to 3 hours.
