Fill a saucepan three-quarters of the way with water and bring it to a boil. Throw in a pinch of salt to help prevent the shells from cracking. Using a large spoon or ladle, lower eggs slowly into the boiling water.

Remove the pan from the heat, cover, and allow the eggs to cook according to the following timetable.

7 minutes – slightly firm

12 minutes – hard-boiled
