GAPS Beet Kvass

Ingredients

  • 1 medium organic beet, sliced fine. (do not grate, beets will turn into alcohol
  • 1-2 Tablespoon sea salt
  • 5 cloves garlic, peeled
  • 1 cup whey, see note
  • 1 teaspoon grated ginger
  • Pure water
  • NOTE: If you omite the whey, increase salt to 2 tablespoons

Directions

  1. Place all ingredients in a wide-mouth 2-quart jar with a 2-piece lid. Fill jar with pure spring or filtered water to the shoulder, leaving about 2 inches between the ferment and the lid. Cap tightly.

  2. Leave on the counter at room tempeerature for 2-5 days, or until lid becomes taut under the pressure of your finger. Refrigerate.

  3. Drink straight or dilute with mineral water.
