Cancer-fighting cauliflower and Kale

Ingredients
- 1 tablespoon grass-fed butter
- 1 tablespoon coconut oil (or more if desired)
- 1 cup chopped shallots
- 1 medium cauliflower, chopped small by hand or in a food processor (pieces should be just larger than a pine nut)
- 1⁄4 teaspoon Celtic or Himalayan sea salt
- 1 teaspoon chopped fresh thyme
- 1 cup kale, de-stemmed and chopped into small pieces
- 1⁄2 cup raw (untoasted) pine nuts
Directions
- Heat the butter and oil in a large shallow saucepan over low heat. Add shallots and sauté for 4 minutes.
- Add cauliflower, thyme, and 1⁄4 teaspoon fine Celtic sea salt and sauté for 1-2 minutes more.
- Cover and allow to cook until tender, about 6 minutes.
- Add kale and sauté until coated and to desired softness.
- Stir in pine nuts and remove from heat. Season with additional salt and pepper, if desired.
