Solveig’s Spinach Soup

Serves 6 people

Ingredients

  • 1 onion, chopped
  • 2-3 cloves garlic, minced
  • 1 pkg. frozen chopped spinach
  • 2 carrots, thinly sliced
  • 1 can garbanzo beans
  • 1 c. orzo pasta or rice, uncooked
  • 4 c. water or soup stock
  • Handful of crumbled feta cheese (or other cheese as you prefer!)
  • 1 tsp. (or so) dill weed
  • Couple shakes of cayenne pepper
  • Fresh-squeezed lemon juice (1/4 lemon or so, to taste)
  • salt and pepper, to taste
  • milk (optional)

Directions

  1. Sauté onions until nearly translucent, then add garlic and cayenne pepper and sauté a couple more minutes.

  2. Add water or stock, then mix in the spinach, carrots, pasta or rice.

  3. Bring to boil, then simmer over low heat 20 minutes or so.

  4. Add garbanzo beans, dill, and lemon juice, and simmer another 10 minutes.

  5. Add cheese and a little milk (optional) at the end, heat just to melt (don’t boil).

  6. Serve hot.
