Salsa Fina Recipe

Ingredients

  • 3 medium red tomatoes
  • 4 green tomatillos
  • 1 each jalapeno (more if you want hot)
  • 1/4 cup coarsely chopped cilantro
  • 1/2 cup coarsely chopped onions
  • 1 teaspoon salt or to taste

Directions

  1. Chop red tomatoes and put in a blender. Blend tomatoes just until they have a coarsely type texture. Put them in a strainer and allow to drain for about an hour.

  2. While they are draining, cook tomatillos in water until they turn grey in color, about 10 minutes.

  3. Coarsely chop onions and jalapeno and put them in the processor and chop. When the tomatillos are done add them to the blender with the jalapeno and onion. Process for a min or so, then add the red tomatoes, cilantro, and salt; blend until cilantro is blended, but is still chunky or visible. season to taste with salt.
