Keto Chorizo & Cheddar Meatballs

For a quicker meal, make patties instead of meatballs and cook them in a skillet. Then pour your sauce on top. Sliced Cucumbers with lemon and salt or your favorite salad and you have a healthy meal.

Serves 4 peopleIngredients
- 1 1/2 lbs. ground beef
- 1/2 lb. Beelers Chorizo, Nitrate and hormone free (find it at HEB)
- 1 cup cheddar cheese, raw cheese if possible
- 1 cup tomato sauce
- 1/3 cup pork rinds, crushed (Epic Pork Rinds)
- 2 large eggs
- 1 teaspoon kosher salt
Directions
- Preheat oven to 350F.
- Break up chorizo into small pieces so that it will mix well with the ground beef.
- Add your ground beef, ground pork rinds, spices, cheese, and eggs to the sausage.
- Mix everything together well until you can form meatballs.
- Roll your meatballs out into circles. Place meatballs on 9 × 13 baking tray lined with parchment paper.
- Bake in the oven for 30-35 minutes, or until meatballs are cooked through.
- Heat the tomato sauce and spoon tomato sauce over meatballs and serve.
