Keto Chorizo & Cheddar Meatballs

For a quicker meal, make patties instead of meatballs and cook them in a skillet. Then pour your sauce on top. Sliced Cucumbers with lemon and salt or your favorite salad and you have a healthy meal.

Serves 4 people

Ingredients

  • 1 1/2 lbs. ground beef
  • 1/2 lb. Beelers Chorizo, Nitrate and hormone free (find it at HEB)
  • 1 cup cheddar cheese, raw cheese if possible
  • 1 cup tomato sauce
  • 1/3 cup pork rinds, crushed (Epic Pork Rinds)
  • 2 large eggs
  • 1 teaspoon kosher salt

Directions

  1. Preheat oven to 350F.
  2. Break up chorizo into small pieces so that it will mix well with the ground beef.
  3. Add your ground beef, ground pork rinds, spices, cheese, and eggs to the sausage.
  4. Mix everything together well until you can form meatballs.
  5. Roll your meatballs out into circles. Place meatballs on 9 × 13 baking tray lined with parchment paper.
  6. Bake in the oven for 30-35 minutes, or until meatballs are cooked through.
  7. Heat the tomato sauce and spoon tomato sauce over meatballs and serve.
