Almond Flour Banana Muffins usingTapioca

Serves 10 people

Ingredients

  • 1 cup almond flour
  • 1/2 cup tapioca flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp cinnamon
  • 2 bananas, mashed
  • 1 egg
  • 1 tbsp honey
  • 1 tbsp coconut oil
  • 1 tbsp vanilla extract

Directions

  1. Preheat oven to 350 degrees.

  2. Mix dry ingredients together.

  3. In a separate bowl, beat egg, add the mashed bananas and the rest of the wet ingredients. Mix well.

  4. Pour dry ingredient mix into the wet ingredients. Mix well.

  5. Spray a muffin tin (or bread tin) add mixture to muffin tin. Baked for about 25 mins or until toothpick comes out clean.

  6. Serving Size: Made 10 muffins
