GAPS Macadamia Fat Bread

Cook time: 35 minutes
Serves 10 people

Ingredients

  • 1 cup macadamia nuts or macadamia butter
  • 1 cup coconut butter (known as manna)
  • 1 teaspoon baking soda
  • 1/2 teaspoon himalayan pink salt
  • 2 Tablespoons lemon juice
  • 5 eggs

Directions

  1. If using blend macademia nuts in a blender scraping the sides until butter consistency is achieved.

  2. In a bowl, mix all ingredients except lemon juice, mix well.

  3. Add lemon juice and keep blending. the batter will become whiter because of the lemon juice.

  4. Prepare loaf pan by greasing it with coconut oil spray; pour the batter scraping well with a spatula.

  5. Bake at 350 for 35 minutes. Wait until cool before cutting.
