Ingredients
- 4 pastured eggs
- 1 cup probiotic cottage cheese
- 2 cups gluten-free oatmeal, soaked overnight in water
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg

In a blender or a food processor, blend together all ingredients until smooth.

Use butter or coconut oil to grease a skillet and set on medium heat

Add pancake batter to skillet and cook until sides are lightly browned.

Add butter and maple syrup and enjoy!
