Low-Oxalate Fresh Pea Soup

Ingredients

  • 14 oz. peeled, chopped yellow onion
  • 3 T Butter
  • 2 pounds shelled fresh or frozen green peas
  • 6 C chicken bone broth
  • 1/4 tsp. ground white pepper
  • Crème fraiche
  • mineral salt, to taste

Directions

  1. Sauté the onion in butter for 5 minutes.
  2. Add broth and peas. Bring to a boil.
  3. Cook for 15 minutes.
  4. Puree soup with handheld (stick style) blender.
  5. Season to taste.
  6. Serve hot. Garnish with crème fraiche.
