Low-Oxalate Fresh Pea Soup

Ingredients
- 14 oz. peeled, chopped yellow onion
- 3 T Butter
- 2 pounds shelled fresh or frozen green peas
- 6 C chicken bone broth
- 1/4 tsp. ground white pepper
- Crème fraiche
- mineral salt, to taste
Directions
- Sauté the onion in butter for 5 minutes.
- Add broth and peas. Bring to a boil.
- Cook for 15 minutes.
- Puree soup with handheld (stick style) blender.
- Season to taste.
- Serve hot. Garnish with crème fraiche.
