Low-Oxalatew Fiesta Red Pepper Dip

Ingredients

  • 14 ounces organic roasted red peppers, drained and rubbed to remove seeds, coarsely chopped
  • 3 cloves garlic, chopped
  • 2 tsp. fresh lemon juice
  • 1/2 tsp. ground cumin
  • 1/8 tsp. cayenne pepper (or more to taste)
  • 2 (22 gm) scallion bottoms, chopped
  • 1/2 tsp. Mineral salt such as Real SaltĀ®
  • White pepper (opt.)
  • 8 oz. Organic Cream Cheese
  • 1/4 C fresh cilantro (8 -10 gms)

Directions

  1. Combine ingredients and stir until blended. Serve.
