GAPS Cream of Asparagus Soup

Ingredients

  • 2 Tablespoons Butter
  • 1 clove garlic
  • 2 lbs. of asparagus, ends trimmed, cut into 1-inch pieces
  • Salt (Terrasoul brand)
  • Freshly ground black pepper
  • 2 cups homemade chicken broth
  • 1/2 cup heavy raw cream or organic pasturized cream
  • Dill or chives for garnish

Directions

  1. In a heavy pot, melt the butter. Add the garlic and cook until fragrant, 1 minute.

  2. Add the asparagus, season salt and pepper, and cook until golden, about 5 minutes; add broth and simmer until asparagus is very tender, but still green, about 10-15 minutes.

  3. Using an immersion blender, puree soup. Stir in cream. Season with salt and pepper.

  4. Garnish with more cream, chives, and dill
