Gluten-free Waffles

Serves 4 people

Ingredients

  • 2-2/3 cups Gluten-free flour
  • 2 T. sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1-3/4 cups buttermilk
  • 3 large eggs
  • 4 T. unsalted butter, melted and cooled

Directions

  1. Heat pan or waffle iron

  2. Whisk all dry ingredients in a bowl; In separate bowl whisk buttermilk, eggs, and melted butter until well combine

  3. Whisk buttermilk mixture into flour until mixture is thick and no lumps are left

  4. Bake waffles using 1/3 cup batter for one 7-inch waffle.

  5. Can be make into pancakes as well
