Gluten-Free Waffles

Ingredients

  • 2-2/3 cups Gluten-free Flour Mix
  • 1-1/4 cups plain yogurt
  • 1/2 cup filtered water
  • 3 pastured eggs
  • 4 Tablespoons unsalted butter, melted and cooled

Directions

  1. Heat waffle iron according to manufactures direction.

  2. 2 Melt the butter and allow to cool.

  3. Mix the plain yogurt with the filter water to make it resemble the consistency of buttermilk

  4. Mix the yogurt, eggs, melted butter until combined; whisk buttermilk mixture into the gluten-free flour until well combined and batter is thickened with no lumps.

  5. Bake waffles in a hot waffle maker. (Use 1/3 cup batter for 7" waffles and 3/4 cup batter for Belgian size waffles.
