GLUTEN-FREE Breakfast Migas

This dish is what I call First Do No Harm. We use the El Siete Maiz brand because of the way the corn is grown and processed. The nixtamalization of the corn makes it more digestible and a kind of fermentation is taking place. This is easier on the digestive system.

Ingredients
- 8 pastured eggs
- 2 tablespoons of organic butter or beef tallow
- 1/2 cup diced onions
- 1/2 cup guiso sauce or mild salsa (The New Plate Guiso Sauce is available for sale)
- 2 cups of broken El Siete Maiz corn tortilla chips
- salt to suit taste
Directions

Add butter to an iron or stainless steel skillet; add the onions and saute them for about 3 minutes. Add the sauce and saute for another 3 minutes or so.

Crack the eggs in a bowls and mix them well; Add the eggs to the mixture in the skillet. Cook them making sure to not overcook. Eggs should be very soft before adding the broken tortilla chips.

Add the tortilla chips and stir-fry for about a minute or two, long enough to combine the mixture well and chips are soft, but retain a little crunch
