Fresh Corn Salad

Ingredients

  • 6 ears sweet corn
  • 1 red pepper, finely chopped
  • 1 red onion, finely chopped
  • 1/2 cup chopped cilantro
  • 1/4 cup lime juice
  • 1/4 cup olive oil

Directions

  1. Briefly cook corn in boiling water, about 3 minutes.

  2. Immediatley plunge cooked corn into ice water to stop cooking.

  3. When cool, carefully cut corn off the cob.

  4. Combine corn with remaining ingredients and chill before serving.
