Ingredients
- 6 ears sweet corn
- 1 red pepper, finely chopped
- 1 red onion, finely chopped
- 1/2 cup chopped cilantro
- 1/4 cup lime juice
- 1/4 cup olive oil
Directions

Briefly cook corn in boiling water, about 3 minutes.

Immediatley plunge cooked corn into ice water to stop cooking.

When cool, carefully cut corn off the cob.

Combine corn with remaining ingredients and chill before serving.
