Personal Pan Nacho

Ingredients

  • 1 small corn tortilla (6 inches)
  • 1 tbsp grated reduced-fat cheddar cheese, not packed
  • 1 chopped, seeded plum tomato
  • 1 to 2 tsp chopped jalepeno
  • Salt and pepper to taste

Directions

  1. Spray a small frying pan with nonfat cooking spray. Place over medium heat and add tortilla. Sprinkle cheese, chopped tomato and chopped jalapeno over tortilla. Cook, covered, until cheese melts, about 2 minutes. Serve immediately.
