A recipe from the old timer Texas Gulf Coast fishermen.
You can use Redfish (Red Drum), or other similar textured fish such as Black Drum or Red Snapper.
- margarine
- Tony's Cajun/Creole seasoning
- lemon juice
- chopped fresh parsley
- Just a little extra salt or garlic salt
If you don’t want to make your own marinade as listed by recipe below you can use “Yoshida’s Gourmet Sauce” that you purchase from “Sam’s”. Use the Yoshida’s as it is out of the bottle or to enhance this add 1 clove garlic minced and some parsley flakes.
- brown sugar
- wine vinegar or apple cider vinegar
- olive oil
- garlic minced or pressed
- ground ginger
- soy sauce
Tried this the other day with the bacon wrap. Not bad…my rub was missing something? But daughter and son-in-law loved it!

- liquid smoke flavoring
- pepper
- vegetable or olive oil
This is best if made ahead a couple of hours and allow to sit out on stove to allow the flavors to mingle. I save my ketchup bottle to store left-over sauce. It will keep for months in the refrigerator.
Goes great on chicken, pork & beef!
- large onion finely diced
- garlic minced
- or two Tabasco sauce
- margarine
- ketchup jar filled with water
- Heinz ketchup
