A NEW YEARS DAY MUST!!
- black-eye peas sorted and washed
- medium onion chopped
- garlic minced
- - 7 slices of bacon cut into small pieces
- salt & pepper to taste
Old recipe. Handed down through the generations. The crescent shape has some religious significance but I don’t know what it is.
I DOUBLED THIS RECIPE…IT MADE A LOT!
- powdered sugar
- vanilla
- flour
- nutmeg or cinnamon
- & 1/2 cups pecans chopped
- extra powdered sugar
Mother always made this cobbler. It is really yummy, but the ingredients as listed are just estimates…it is one of those things you just sort of have to do by figuring out how many peaches you are using and add more cream and sugar if necessary.
- Fresh or frozen peaches
- sugar (or more
- home made pie crust
Pretty sure this not authentic Hungarian but it sure is good. During the depression my mother worked for a wealthy family, this was one of their favorites and requested she make it when they had guests.
- sour cream
- medium onion diced
- margarine
- salt and pepper to taste
This is delicious. Lots of curry powder. Probably not an authentic Indian recipe…but it sure is good. During the depression my mother was a cook for a wealthy family and this was one of their favorites.
Oh, this takes two days…one day of cooking the chicken then chilling over night. The next day to actually make your dish.
- large carrot quartered
- salt & pepper to taste
- water to cover
- -
- CURRY SAUCE:
- chicken fat
- hen stock
- whipping cream
- celery
- large onion quartered
- large hen cleaned & quartered
- BROTH:
- egg yolk
To make a quick chicken soup I use the “Lipton Dry Chicken Noodle Soup Mix”. I follow the basic directions for the soup but will add 1 chicken bouillon cube and 1 extra cup of water. Then I will drizzle my “kapanki” mixture into this soup. Of course you can use your own home made chicken broth.
My son quickly learned to make this when he went off to college…he liked it better than Ramen and it was his “go to” soup when he wasn’t feeling well.
- Lipton Dry Chicken Noodle Soup mix
- eggs depending on the amount of noodles you want
- chicken bouillon cube
- water
- flour
- extra water
- salt to taste
These are good but I think too salty. Millie’s Pickles in this book are much better.
- fresh dill
- red pepper
- onion
- distilled water
- canning salt
- garlic
- small cucumbers washed
Interesting addition of grapes and grape leaves. And I like these because they are not overly sweet.
- distilled water
- sugar
These are the best canned beets I’ve ever had or made.
Most pickled beets taste like “dirt”…because you peel these before cooking the “dirt” taste is gone!
- sugar
I haven’t made these, but hers were always good.
Little different pickle…she puts a little sugar and less salt.
- fresh dill per jar
- 1/4/onion per jar
- canning salt
- sugar
- garlic per jar
- distilled water
