THIS WAS RESTAURANT WORTHY! I found this recipe on the internet…I had some nice grouper. They did not give amounts unless I joined their site so I “winged” the sauce. My husband was IMPRESSED! So was I!
I think this would work good for Snapper, red or black Drum, Catfish, many other fish.
- For Grouper:
- Flour
- Egg
- Milk
- Panko Bread Crumbs
- -
- Hellman's Mayo
- approx. sour cream
- buttermilk
- 1/4+ teaspoon garlic powder
- garlic salt
- onion powder
- hot sauce
- juice from a wedge of lemon
- finely diced celery
- -
- I think some thinly sliced red onion would be nice.
- Tomato
- Hoagie bun or I used a Bonillo Bun.
- Lettuce
- nice piece of Grouper sliced 1 inch thick.
Makes 8 corn dogs (I think you could make more with the amount of better this makes.)
I took the original recipe and combined it with another I had. It turned out amazing!
WHY THIS RECIPE WORKS:
To re-create this state fair favorite at home, we made a light batter with flour, cornmeal, buttermilk, and eggs. Coating the skewered hot dogs in flour before batter-dipping ensures the batter adheres to the hot dogs. To make coating the hot dogs easy, we transfer the batter to a tall drinking glass for even, hassle free dunking.

After looking up conversion charts…100 grams = 1 cup
