This is really yummy! I serve it with yellow rice and black beans. It can turn out pretty spicy depending on what level of hot sauce you use. If you don’t want it to be too spicy for the kids, you might want to stick with mild hot sauce. You could try using regular coke instead of diet if you prefer, but it might be on the sweet side if you don’t that.
The following is Jen’s recipe. I’ve made it several times now and we all love it. When I make it with 2 lbs of the elbow mac, we usually have enough for one meal and then another meal with a vegetable added on the side. I also usually serve this with cornbread and shredded cheese on the side.

This recipe calls for cheese on top, but I’ve made it before without for Caleb. You could leave a portion free from cheese or leave the whole thing free from cheese and let people add it later if they want it.

I’ve started buying the already chopped garlic in a jar and it saves me a lot of time when a recipe calls for chopped garlic. I don’t have to peel and chop the garlic, just have to measure out what I need into the recipe.
