Carmina and Eloisa were two young teenage girls from Mexico who stayed with our family for two weeks. We had such a wonderful with them. They loved chocolate chip cookies and we baked them regularly. In turn, they called their mother long distance for the homemade tortilla recipe.

These muffins are extra large and yummy with a sugary-cinnamon crumb topping. I usually double the recipe and fill the muffin cups just to the top edge for a wonderful, generous-sized deli-style muffin. Add extra blueberries, too, if you want!

Mom made this quite frequently as a healthy morning muffin. Nutri Grain just as a cereal isn’t available anymore. You could substitute with another whole grain flakes cereal. Adding raisins makes these even more moist and scrumptious…if you like raisins.
