I never wanted to try chicken pot pie…seemed like just too much work. Played around with ingredients and came up with this.

You can debone the chicken prior to “creaming”, cut up and add back to broth.
I do this…but I will also add a cup or two of frozen mixed vegetables during the last part of stewing the chicken.
I also make my chicken and dumplins like this…easy dumplins…purchase the really cheap small canned biscuits, cut each up into quarters with scissors and drop into creamed chicken…simmer very, very slowly for 10 minutes more to cook the dumplins being careful not to burn your creamed chicken on the bottom.

You can “build” this in your glass casserole dish…but because some don’t care for all of the ingredients I keep each ingredient separate and let each person build their own.
This is good as is or you can use the “Spicy French Salad Dressing” in this book.
My friend, Sue, never used the Ranch Style Beans…but I tried this once and we loved it.

This makes two large electric roasters full!!! Use this for your church, family reunion or any large gathering. You can easily divide this into servings for 100 or 50 people.
This recipe allows for 3/4 cup sauce per person serving.
Read the package of pasta to figure out how much of that you need to purchase.
Add a tossed salad, some garlic bread sticks and a container of Parmesan and everyone is happy!

Per Linda: Great “company” dish! My family likes a lot of the sauce to use over our rice, so I will triple the recipe for sauce or gravy (amounts are not tripled here).
Serve over rice pilaf, or plain rice. Serve with cooked frozen green peas.
