Be sure to use the old fashioned rolled oatmeal and not the “quick” or instant 1 or 3 minute oatmeal. My family does not like coconut so we leave out the coconut in the icing, also I think the icing makes the cake moister if coconut is left out. A really great cake “the next day”.

This is the 7-minute frosting that I use.
I have read other recipes for 7-minute type icings…they all call for using a double boiler…I haven’t used one and if you keep your heat low enough you shouldn’t need one. An old stand-by recipe from my days at Lone Star Gas Company home ec department in the 1970’s.
