Notes::::
I used scallions (2) in addition to about 1/4 lg red onion, and about 1/4 cup dried cranberries. I didn’t add any cheese and we didn’t miss it. For the vinegar, I used the Blackberry vinegar from Cheshire Gardens.

The skinless chicken browns nicely over a medium flame, and the sugary soy basting sauce lacquers it beautifully in the final few minutes of cooking. It’s terrific with rice, or as a topping for a salad of sturdy greens. You may wish to double the recipe for Sriracha-roasted cashews. Those are addictive, and for them you will find many delicious uses.

Diced avocado, sour cream, and shredded Monterey Jack or cheddar cheese are also good options for garnishing. This chili is intensely flavored and should be served with tortilla chips and/or plenty of steamed white rice.

Onions or shallots can be used in place of the chives. Use about 1/2 cup, finely chopped, and sauté in butter first, before spreading over the bottom of the quiche crust with the bacon.

We give instructions for making your own crust from scratch. You can also easily use a frozen pie shell, just keep it frozen, do not defrost.
We use goat cheese in this recipe. You could easily sub with grated Gruyere or Monterey jack.

-Instead of using chorizo sausage, use regular pork sausage
-Instead of fire roasted tomatoes, use regular diced tomatoes
