As stated, this recipe is very spicy. I often reduce the number of serranos to 4 and chili powder to 2 T.

My butcher does all the fancy cutting for me. If they will not cut the bone for you, do it at home with a butcher knife (careful!) or have them remove the meat off the bones but reserve the bones for you. Place meatless bones into pan whole. The bones are needed for flavor, and taste really yummy.
