This is one of those recipes that you don’t really measure…just use as much or as little of suggested ingredients.
- LeSur Peas drained and rinsed
- sweet onion finely minced or 1/2 bunch green onions sliced
- ribs celery finely diced
- hard boiled eggs chopped
- either dill or sweet relish
- Salt & pepper to taste
- mustard
- Miracle Whip salad dressing to make creamy
- Velveeta Cheese in small cubes or a colby cheese in small cubes
This a good recipe for lots of things that you might want to can or pickle.
Suggestions: small black-eye peas, corn, green beans, baby tomatoes, baby squash, cauliflower…just anything.

This was pretty good used as a glaze on my boiled ham recipe in this book. I actually made with crasins, boiled my ham, pulled out of water, scored top of ham, glazed and placed in a 350 degrees oven for 15-20 minutes.

This is very different and good. This is MY EDITED version of the original recipe.
Original recipe called for 4 cups cabbage and no peas, called for “mustard” I used dry mustard, called for “vinegar” I used red wine vinegar, and I added some boiled eggs.

This is made entirely in the microwave for convenience…but it could be made on stove top.
