This is great with larger yellow squash “circles” or green zucchini squash “sticks”. Another good squash is the white (pale green) scalloped “patty pan” squash sliced into “ovals” not big circles.

Instead of frying button mushroom…try slicing a large Portabella Mushroom and coating in meal mixture.

I converted a “non-squash eater” into loving squash with this recipe.

This is from a very old “Fannie Farmer” cookbook and makes a light “tempura” type batter. You can also use this for shrimp.

I ate this at a Scout camp out…it was really good…when I fixed it, it didn’t turn out quite as good. It is my contention that some people intentionally do not give you the full or correct recipe.

- potatoes diced into 1 to 1/2 inch chunks

Haven’t tried.
This has lots of thyme in it and hubby is NOT a fan of thyme…gonna have to try a different spice…maybe a sprig of rosemary and a couple bay leaves to be removed later. See my guide to spice and herb substitutions in this book.
